Cocoa Polvorones (Snowballs)

Ingredients:
1/3 cup pecan flour
1 2/3 cup confectioner's sugar; divided
1 1/2 cups all-purpose flour
3/4 cup cocoa powder
1/2 teaspoon salt
1 cup unsalted butter; cold, cubed
1 large egg
1 teaspoon vanilla
Directions:
Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
In a small mixing bowl combine pecan flour and 2/3 cup confectioner's sugar and set aside.
Mix flour, cocoa, and salt in a large mixing bowl. Add chilled butter and work into flour mixture using your hands or a pastry blender, until a coarse crumbly dough is formed.
Add pecan flour and sugar mixture to the dough, continuing to work with your hands. Add egg and combine thoroughly until the mixture comes together as a dough ball.
Roll dough into small balls, approximately 1" in diameter, and arrange them on prepared baking sheets.
Bake until set, 12-15 minutes.
Remove sheets from the oven and cool for 2 minutes. Roll cookies in the remaining 1 cup of confectioner's sugar, coating thoroughly. Place powdered cookies on a cooling rack to finish cooling.
